Mexican Street Corn (Elote) - Summer Version

This Mexican Street Corn is one of our favorites. We could only think of one way to take it to the next level of flavor explosion - SHAWARMA SAUCE!  Be the King (or Queen) of your next gathering or BBQ. This is a must try!!!

Ingredients

  • 4 ears corn
  • 2 Tablespoons Shawarma Sauce
  • 2 Tablespoons Mexican crema (or sour cream)
  • ½ cup grated Cotija cheese (or queso fresco)
  • Tajín spice (or chili powder) to taste
  • 1 lime , quartered, for garnish
  • fresh Italian parsley , for garnish

Instructions:

  • Bring a large pot of salted water to a boil over medium-high heat. Add the ears of corn and cook until tender, about 10 minutes (Optional - you can grill the corn as well).
  • Mix the Shawarma sauce and Mexican crema together and spread a thin layer all over the corn.
  • Pour cotija cheese on a plate and sprinkle generously all around corn.
  • Dust corn with desired amount of Tajín or chili powder.
  • Serve garnished with Italian parsley, and a lime wedge on the side for squeezing on top.
